A sherry-only bar open since 1922, famously resistant to change — no photography, no soft drinks, chalk tallies scrawled directly on the wooden bar to track your tab. Order by sherry style; the bartenders will tell you if you're doing it wrong.

The no-photography rule is enforced and dates back to the Spanish Civil War, when the bar was a meeting point for Republican sympathizers who preferred not to be documented — respect it, staff will ask you to stop. The menu is short: sherry (fino, amontillado, oloroso) and simple tapas like olives and mojama, nothing more. It's small and gets busy early evening; there's no reservation system, so it's first-come.
