A no-frills tapas bar near Plaza Mayor beloved for one thing above all: bacalao (salt cod) fried to order, bones removed by hand at the counter. Standing room only, sawdust-and-tradition energy, prices that still feel like the 1990s.

There are a handful of small tables but most regulars stand at the bar — arrive at classic Spanish eating hours (14:00 or 21:00) and expect to wait for space. Cash is strongly preferred, though cards are grudgingly accepted. Closed Sundays, and the bacalao sometimes sells out before closing on Saturdays, so don't leave it to the last possible visit.
